GETTING TO KNOW THE SUGAR CANE AND RUM INDUSTRY

The Island produces without any doubt the best rum in the world. Its three distilleries (Bellevue, Bielle and Poisson) produce a white agricultural rum, which means that the rum is obtained directly from the distillation of the cane juice with an alcoholic volume of 59°.Helpful hints: For those of you not accustomed to strong alcohol you may prefer sampling the different liquors on hand. However, fine connoisseurs will appreciate the old rum that has been aged in oak barrels for over eight years.
Punch recipe:
- 1 teaspoon of cane syrup
- 1 lemon zest
- 2 fingers of rum

USINE DE BERNARD
The Bernard Refinery is a bit peculiar in that the cane processed here came from the heights of Capesterre and was delivered to the refinery by way of cable car. Signs of the machinery are still visible as well as the supporting pillars of the cables.

PRODUCTION OF MOYSAN CANE SYRUP
